Zedoary Root the flavor of mango and ginger
The plant is native to India and Indonesia.

Zeodary is native to the tropical and subtropical wet forest regions of north-eastern India India, Indonesia as well as the sub-tropical regions of eastern Nepal, today it is widely cultivated in India, South East Asia and China.

Zedoary is the root of the Indian plant Curcuma zedoaria, (also known as red ginger, white ginger and white turmeric), a rhizome of the Zingiberaceae (Ginger) family, a member of the ginger family.

The essential oil produced from the dried root of Zedoary is used in perfumery and soap fabrication and long been popular in the manufacture of flavors, used in cordials and liqueurs, and as an ingredient in Swedish Bitters formulas.

History records Zedoary was introduced to Europe by Arabs around the sixth century, but its culinary use in the West today has declined due to the bitterness of the spice and has been replaced by the more subtle flavors of turmeric and ginger. It seems to have been recognized in Europe through the medieval period and recipe sources up to the 16th century make use of dried zeodary as a spice.

Medicinal Uses

Zedoary is often used in some traditional eastern medicines where it is reputed to be an aid to digestion, a relief for colic and an agent for purifying the blood. Volatile oil is a viscid liquid of a greenish color, with a smell of ginger oil mixed with camphor. In Ayurveda, Zedoary is used for diarrhea, cancer, flatulence and dyspepsis.

  • Used to treating ulcers
  • Used as anti-venom for the bite for the Indian Cobra

and added to curry pastes

Culinary uses

Zedoary root has a white interior and a fragrance reminiscent of mango, very pungent, warming and slightly aromatic, its flavor is more similar to ginger and tumeric but its flavor is not as subtle with a very bitter aftertaste.

In Thailand, the young rhizomes are often eaten as a very aromatic vegetable and in India it is occasionally used to flavour the pickles (achar). In Indonesia the edible root of zedoary is ground to a powder and added to curry pastes. It is also used in Nigeria to color some meat sauces. It is commonly used as a tea or food supplement without any negative side effects.
