Roast Chicken with Lemon Herb Rub: Recipe courtesy of: My Spice Blends | Date Added: 23 Dec 2011 Ingredients:

2 lemon rinds, minced
5 cloves garlic, minced
1 tablespoon thyme, dried, rubbed finely
2 teaspoon rosemary, dried, rubbed finely
2 teaspoon sage, dried, rubbed finely
1-- 3 ½ to 4 pound chicken
Salt and pepper to taste

Cooking Instructions:

In a bowl mix the lemon, garlic, and herbs to form a moist paste. Wash the chicken and salt and pepper it. Pull the skin up on the bird and put the herb mixture up under the skin. Note a chop stick works well for pulling up the skin. Make sure to rub the mixture all over the chicken as well as under the skin of the legs. You may also rub the herbs all over the outside of the skin as well. Season the cavity of the chicken with salt and pepper. Cook at 30 minutes per pound and when it is done the instant thermometer temperature of the legs and thighs will be 160°.
