Spanish Rice: Recipe courtesy of: My Spice Blends | Date Added: 11 Jan 2012 Ingredients:

2 slices bacon, diced small
½ cup onions, chopped
¼ cup red peppers, chopped
¼ cup green peppers, chopped
2 cloves garlic, chopped
1 cup long-grain white rice
2 cups chicken stock (vegetarian substitution - vegetable stock)
1 cup tomatoes, canned, diced, drained
½ teaspoon sweet paprika
¼ teaspoon black pepper, ground
¼ teaspoon salt

Cooking Instructions:

In a medium sauce pan, sauté the bacon until crisp.
Add onions, peppers, and garlic cooking over medium heat stirring, just until the onions are transparent (about 5 minutes). Do not brown
Add rice and stir coating well.
Add chicken stock, tomatoes, and spices. Bring the mixture to a boil. Stir the mixture once and cover with a lid.
Reduce heat to simmer and continue cooking covered until the stock is absorbed and the rice is tender (about 20-25 minutes).
Uncover and let the rice stand for 5 minutes.
Fluff the rice with a fork and serve.
