Recipe Yield: Approximately ¾ cup | Prep Time: 30 minutes
Ingredients

⅓ cup mustard seeds
1 tablespoon sugar
1½ teaspoon salt
2 teaspoons turmeric
¼ cup white wine vinegar
2 tablespoons olive oil
1 teaspoon Worcestershire sauce
¼ teaspoon liquid smoke
Dash of hot sauce
3½ ounces water

Cooking Instructions

In a small pan over a medium heat, toast the mustard seeds until they begin to open up (pop), approximately 1 minute. Transfer them to a cool container and cover. This will stop the process of the popping. Let the seeds cool completely.

Place the seeds, the sugar and salt into a coffee or a spice grinder. Grind the ingredients into a fine powder.

Put the freshly ground powder into a pan and add the turmeric, vinegar, olive oil, Worcestershire, liquid smoke, hot sauce and ½ of the water. Cook the mixture over a slow heat, stir continuously, until all the powered ingredients are melted and the mixture is hot. About 5 minutes. Now whisk in the rest of the water and place into an airtight container and place into the refrigerator overnight. All homemade mustard should be rested overnight before use.
