This unique and tasty dish is easy to make!

A perfect complement to "Taco Night" meals or as a main course.

Enchilada Pie

1 1/2 lb Ground Beef
1 tsp salt
1/4 tsp ground black pepper
1/2 tsp ground cumin
1 lg Onion,Chopped
1 can Green Chilies (4 Oz),Chopped
1 can Cream Of Mushroom Soup
1 can Cream Of Chicken Soup
1 can Enchilada Sauce
3/4 cup Milk
1 package Flour Tortillas
1/2 lb Cheddar Cheese,Grated
1/2 lb Monterey Jack Cheese,Grated
1 pint Sour Cream
Black Olives
Fresh Cilantro

Cooking Instructions

In large sauce pan,
1.) Brown ground beef and drain. Add chopped onions cooking until translucent, and season with salt, pepper and cumin to taste.

2.) Add green chilies, soups, enchilada sauce and milk heating to simmer. Remove from heat.

3.) Line a 9x13 inch pan with 6 tortillas and top with 1/2 inch layer of the meat mixture & cheeses. Repeat layers.
Cover with foil and bake at 350 degrees for 40 minutes until bubbly. Remove foil and cook an additional 5 - 10 minutes to lightly brown cheese if desired ; let stand about 10 minutes to firm up and cool slightly.

Cut into 12 triangles and top each with a teaspoon of sour cream, sliced or chopped black olives and a sprig of cilantro to serve.
