Garlic and Lime Chicken Drumettess with Chipotle Dipping Sauce

3 pounds of chicken drumettes.

Garlic & Lime marinade:
2 teaspoons cumin seeds, toasted, crushed
⅔ cup freshly squeezed lime juice
⅓ cup olive oil
Grated zest of 2 limes
½ cup melted butter
6 cloves garlic, finely minced
2 teaspoons Mexican oregano, minced
1½ teaspoons salt

Chipotle mayonnaise:
1 cup mayonnaise
½ cup sour cream
2 to 3 fresh chipotle chilies or to your taste, finely chopped
1 tablespoon Dijon mustard
Grated zest of 1 lime

Cooking Instructions

1. Rinse the wings and pat dry.
2. Preheat indoor grill to 350°F.
3. To make the marinade, place the cumin seeds in a small skillet and toast over medium heat until golden and fragrant, shaking the pan to assure even toasting. Remove from the skillet and crush in a mortar with a pestle. Combine the crushed cumin seeds with the remaining marinade ingredients in a large shallow bowl and whisk to combine. Add the wings and completely cover with marinade. Cover and refrigerate for about 4 hours.
4. Wipe the grill with oil and lift the chicken out of the marinade, reserving the marinade, place on top of the grill. Cook for approximately 30 minutes or until wings are completely done, although be careful not to overcook them. Coat halfway through cooking with the remaining marinate.
5. To make the chipotle mayonnaise, combine all the ingredients in a small bowl and whisk until smooth, or pulse a few times in a food processor for a smoother sauce; cover and refrigerate until ready to serve. The sauce can be made ahead of time.
6. Serve the wings hot or warm, with the chipotle mayonnaise for dipping.
