Vegetarian Chocolate Chip Cookies:

This delicious chocolate chip cookie is tasty and nutritious, and while being vegan friendly does contain wheat (spelt) flour. For a gluten-free version substitute your own gluten-free baking blend for the flour, baking powder and soda.

Gluten Free doesn’t have to mean “flavor free” If your needing an all_purpose gluten-free alternative, try these: Gluten-Free Pantry All Purpose Baking Flour blend in all your gluten free recipes. To convert any recipe, simply use a cup of all purpose gluten free baking flour to replace 1 cup of regular flour. A very convenient and high quality product. Ingredients: White rice flour, potato starch, tapioca starch, guar gum, salt.

Vegetarian Chocolate Chip Cookies

1 1/4 cups spelt flour (or wheat)* (For gluten free: see notes above)
1/4 teaspoon sea salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 cup granulated sugar
1/3 cup maple syrup
1/3 cup coconut oil (or other vegetable oil)
1 1/2 teaspoons almond extract (or vanilla extract)
1/3 cup fresh chopped pecans - toasted (optional)
2/3 cup vegan chocolate chips or some cut-up vegan chocolate bar

Cooking Instructions

1.) Preheat oven to 350 degrees F.

2.) In a medium bowl, stir together flour, salt, baking powder, baking soda and sugar.

3.) In a separate bowl, mix together maple syrup, oil and extract.

4.) Add the oil mixture to the dry mixture and stir until combined. Fold in pecans and chocolate chips.

5.) Drop by rounded tablespoonfuls onto prepared cookie sheet (Use a non-stick cookie sheet or just line a cookie sheet with parchment or release foil.) Bake for 11 minutes.
