Ingredients

2 1/4 cups sifted cake flour (not self-rising; sift before measuring)
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup mashed very ripe banana (about 2 large)
1/4 cup plain yogurt, sour cream or buttermilk
1 teaspoon vanilla extract or banana extract
1 stick (1/2 cup) unsalted butter, softened
1 cup sugar
2 large eggs

Cooking Instructions

Preheat oven to 350* F. Butter and flour 3 8-inch cake pans; set side.

In bowl, sift:
2 1/4 cups sifted cake flour (not self-rising; sift before measuring)
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt


In separate bowl, whisk
1 cup mashed very ripe banana (about 2 large)
1/4 cup plain yogurt, sour cream or buttermilk
1 teaspoon vanilla extract or banana extract

In large bowl, beat
1 stick (1/2 cup) unsalted butter, softened
1 cup sugar

Beat until fluffy - add - one at a time
2 large eggs

Stir in flour and banana mixtures alternately - stirring after each addition ONLY until moistened - DO NOT OVER-MIX.

Pour into prepared pans, bake about 18 - 20 minutes of until done.
Remove to wire racks to cool.

Frost with cream cheese frosting, chocolate frosting, or whipped cream frosting.
Store refrigerated.
