Fresh Herb Season Sauce Recipe

This Fresh Herb Season Sauce was inspired by a traditional chimichurri sauce.

This is a popular sauce used with grilled meat in many Latin American countries, and this version of the seasoning concentrate can be added to a variety of dishes.

Fresh Herb Season Sauce

Prep Time: 3 minutes
Total Cook Time: 3 minutes
Yield: Makes aprox 1 ½ cups

Ingredients:

  • 1 large poblano chile, roasted, peeled, seeds and stem removed, cut into 1-inch pieces
  • 3 to 4 cloves garlic
  • 1 cup firmly packed parsley leaves and tender stems
  • 1/4 cup cilantro leaves, packed
  • 2 tablespoons rosemary leaves
  • 2 tablespoons oregano leaves (Yucatan or Cuban type if available)
  • 1 tablespoon coarsely chopped orange peel, colored portion only
  • 1 small serrano chile, seeds and stem removed
  • 1/2 cup olive oil
  • 1/2 cup fresh lime juice
  • 1/2 teaspoon salt

Directions: Combine all ingredients in a food processor or blender; process until smooth. Flavor is best if prepared at least 24 hours ahead, particularly if using uncooked. Store in the refrigerator. Do not freeze.

Try these Variations.

Create a basting sauce for meat dishes or a unique tasty salad dressing by thinning the mixture with oil and fresh lime juice.

To make a special piquant dipping sauce, mix in sour cream or yogurt, delicious with tortilla chips or fresh cut veggies.

Storage: Store in the refrigerator. Do not freeze.
